Recipe #101: Spanish Tortilla

This recipe brings me back to my wonderful time in Spain one summer during college! Will doesn't like onions so I took out the onion and added bacon instead!

You need:
8 small potatoes
1 onion (or 5 pieces of bacon, cut up in small pieces)
5-6 eggs
lots of oil

  • heat oil, cut up potatoes and onions
  • first fry up bacon, take out save for later
  • heat potatoes and onions until soft
  • mix up eggs
  • pour out oil
  • add eggs to potatoes. Allow the bottom to set
  • once it seems to be firm on the bottom, take a plate to help you turn the torilla over.
  • cook until seems done all the way through

it was more potatoy then i remembered it supposed to be...i am wondering if i mixed up the number of eggs and potatoes! :) i wouldn't be surprised!
