You need:
2 zucchini, cut in half then sliced long ways
a couple slices of onion
2 Tbsp olive oil
salt and pepper
pasta (I used half a box of linguine)
couple handfuls of fresh spinach
2 tsp red wine vinegar
2 spoonfuls of ricotta
crushed red pepper
- cook pasta according to package directions
- meanwhile, cook onion and zucchini in olive oil
- save 1/4 cup of pasta water, drain pasta
- add pasta to pan with zucchini, add spinach, pepper and salt, mix up.
- serve with a spoonful of ricotta and crushed red pepper
