You need:
2 zucchinis
2 cups panko
grated parmesean
dried basil and oregano
2 eggs, beaten
- preheat oven to 425
- cut zucchini in half then cut each half into 9 pieces
- mix parmesan and herbs with panko
- dip in egg and then in panko
- place on a cookie sheet, lined with parchment paper that has been sprayed with olive oil
- bake for 12 minutes, turn zucchini and bake for 12 more minutes
- we enjoyed with sesame seed dressing!
